What good games are is very subjective. Minecraft is quite a special case for its price, too. Skyrim is now very cheap and one of the most popular games and you also seem to play older games. Otherwise maybe Portal 2 or Need for speed undergroudn 2. Of the newer games, I think The Witcher 3, Horizon Zero Dawn, Detroit become human, The Talos Principle are very good.
How do you determine the quality? The graphics, the scope, the mechanics tend to get better and better. And the story isn't exactly amazing in old games either

I can't do anything with most AAA games either, but you have to know your gaming taste best.

For example, I've been playing "The Binding of Isaac" for almost 10 years because there's nothing better in this genre for me, I recently started with Hunt: Showdown.

I also play a lot of indie shooters which stick to old school titles like Doom, Blood etc.
