I want to use the dolphin's boost to be quick in the water, but I always build a 2x2 waterhole with a high wall but the dolphin dies within a maximum of 5 minutes. Why does this happen and how can I build it so that it works

The dolphin will only stay there as long as you are around. If you move away from the dolphin, it will despawn (no longer be there) after a while.

You can prevent this by renaming a name tag with an anvil (no matter what name) and then giving it to the dolphin. So he has a name and can't despawn.

Build a bigger cave or something similar for the dolphin. Maybe it was because of that. But even if you stand right next to him, he can still despawn despite the super enclosure if he is not in your field of vision. So if you are not looking at him, he can still despawn, even if you are only standing a few blocks away from him.

Dolphins need - just like in real life - air. Otherwise they will drown.

Place soul sand under the water so that the dolphin is constantly supplied with air bubbles.

And no, a mob can't despawn if you're right next to it. Even if it is out of sight. A mob must be more than 24 blocks away to despawn.

Did you use glass for the wall and ceiling? Then they shouldn't actually be able to suffocate in it.

Put them in a minecart like the guy in the video. Then nothing can happen to them.
