Why does the water always run through the trap doors? Minecraft?

This question probably goes to the Minecraft pros out there. I recently watched a video from Laserluca. There he recreated an automatic wheat farm from zaypixel. I found these very beautiful and have recreated them. However, that doesn't work. As soon as I put the water in the "basin" between the two trap doors, it keeps running out. (The trap doors are closed;) I recreated everything as he did and I don't understand why it doesn't work… (I have the Bedrock 1.16 version)

New version is more realistic etc. Take the 1.12.2 or so (Java is best)

Farms like this don't work in every version, and if the video is from the java edition, and this is the bedrock edition, then anyway not.
