Can you hide the server name you entered in Minecraft where the MOTD is? I would just like to have the correct name displayed in bold in the MOTD and in rainbow colors of the server, i.e. Hide the thin white name at the top left. Does that work with plugins? By the way, I installed AdvancedNMOTD. Maybe that's it?
No, that's not possible, what is there's clientside and determined by the player and not changeable / hidden by the server.

No - but you can't force your players to a texture pack anyway if they're not on the server. You could just tell them that you shouldn't give the server a name.
