I think that it could actually be due to other games. Mineplex used to be so hyped, there were a lot of creators who recorded there. But the only thing that was actually "hyped" there was, in my opinion, Master Builders. And that has more servers now. There are not the standard modes like bedwars etc.

I would not necessarily say that Minecraft is "out". However, even if it sounds comfortable, it's a bit dated. Compared to many other games Minecraft is now a classic car among the games.

And as it happens, viewers mostly follow the creators and play the same game. After all, the goal is often to play with your YTber. And that happens. Not just related to some servers, but also to the whole server. Servers that sometimes had several thousand active players, today may only have 100 or even less and are at the subsistence level.
Overall, I would say that sometimes it is common for a game not to be played over time, even though MC never seemed so. However, there were also one or the other updates that the community does not like, which is why at this point is often stopped playing this game.
Not to forget, of course, is the point of whether the developers go to the community or not. Unfortunately, with MC, the devs do not respond to the community.
The prime example at this point is Fortnite. Here the devs are very responsive to the wishes of the community.
If many Ytber were to actively bring back MC content now, the number of players in MC would also go through the roof again. YouTube has a huge impact on society today.
