I play Minecraft java Edition on an iMac late 2012 and I want to activate a shader for a long time, but unfortunately I can't because the Shader menu is not displayed.

You have to download Optifine first. This improves the performance and there's the shader mod in it

Shaders can only be used with Optifine
But I don't think it will go well on your mac. Probably max. 30fps probably a lot less
No only with the shader mod. But it is now automatically included in optifine.
You still have to install the Java Runtime Environment so if you have installed OptiFine. Here is the link: https://www.java.com/.../download/
Simply follow the installation steps and the rest will be automatically saved in your AppData.
