Which hardware and software do you need to make PROFESSIONAL yt-Lets Play Videos (FIFA, Minecraft)?

Costs are absolutely no matter. It should be the best of the best.

For audio recordings I use the program Audacity.

Software moderately, I would use adobe premiere per cc (and possibly still adobe after effects for effects and etc) or Sony Vegas Pro for video editing. Many big youtuber use one of these programs. Personally, I prefer to use adobe, but you have to know.
Maybe adobe audition if you want to do a lot with the audio.
I would actually record with nvidia shadowplay. This has a very good quality and you can use it for free if you have a nvidia card.

Hardware matters a bit, of course you need a good computer, that much is clear.

You now have the choice whether you get a second computer only to record or on the computer on which you also play zockst at the same time. Second computer is better IMHO, but also costs much more.

If you want to record in 4k, then you can take a gaming calculator with 2080 Ti, but for the games you call that probably already a 1080, but you did not want to save, so you can actually take the 2080 Ti, The 1080 (Ti) does not have a disadvantage.

The processor of the 8700k would be the best for gaming if you want to use two computers. For games, this is almost always the fastest. You can also overclock it well.
In the second computer, you can then use something with many cores, in my opinion, because the xeon platinum 8180 is the best option, but it costs about $ 10000. If you do not want to spend quite so much you can take something like a threadripper 2950x or i9-7980xe or even an epyc processor. But they are not that good.

If you only want to use a computer then it would be useful to take something with more cores but still high clock. The 7980xe would be there in my opinion then the best option.

Then you should see if you want to have a graphics card specifically for rendering in your second computer. Something like a quadro. But that is not necessary in my opinion.
