Why is my RAM on the PC at 100%?

So I have the error that if I open Minecraft 2 times (I've added enough RAM to the game) that after about 5 minutes my RAM goes to 100% through the inactive Minecraft tab and I can no longer close it, neither does it the Task Manager.

How much GB of RAM do you have? Clock frequency? Other components such as CPU, graphics unit, etc? Why do you start the game 2 times?

So I have 32gb ram, a RTX 2060 Super and a ryzen 5 3600x,

i start the game 2 times because i need 2 accounts for a server, i assigned 7gb ram to the game

It's never over 40% and then suddenly from now on the game hangs up i can't close it and the ram goes to 100%
