Watermelons and pumpkins are easy for fully automatic farms.

For wheat, potatoes, carrots and beetroot you can grow in 1.12 farms with villagers. Also fully automatic.

It gets harder with animals. The killing and collecting the loot is automatic, but breeding is done by hand. The baby animals are automatically transported away and killed as soon as they grow up. Go with all passive mobs.

Fully automatic monster farms are simple and classic.
