Can you somehow adjust what a villager should do and what he should look like?

You can set them with commands. Just type in "Minecraft villager trading command german" at YT and the first video explains that quite well.

Because the plugin says:

Use the "Shopkeeper" plugin,
just type / shopkeeper and then sneak and right click and then you can set everything.
