Why does Minecraft stutter when I start OBS?

Since I'm on YouTube, I want to bring the best quality. However, I can't record properly because my recordings "stutter".

So that you can get a better picture of what I mean here is a small example video:

I've already tried everything at OBS to change the settings and and and. The stuttering starts when I have only OBS open and don't do anything about it. A new installation of OBS-Studio, Minecraft or the whole of Windows couldn't help me. This "stutter" is only when I'm in full screen, but everything is normal in windowed mode, and I really don't like playing in windowed mode.

Perhaps relevant information:

Pc: Windows 10 Pro, ASRock A320M-HDV R4.0, AMD Ryzen 7 2700, Geforce GTX 1660, 16GB DDR RAM.

I would be grateful if you could help me: ^)

Hey have you ever tried to limit the FPS to 60 in Minecraft? And if OBS does not work with other games as intended, you can test it.

The FPS limited does nothing because the problem is still the same. But it is only with Minecraft and not with other games like Apex or something

Have a look in taskmgr after how much power, with obs net should be over 70% GPU. At OBS I have never really got anything in fullscreen fashion to work, mostly only blackscreen…

Thank you so much! I checked and OBS pulls 35 to 40% GPU and Minecraft generally also 35 to 40%, which means I get almost 70% GPU load!
