I have the problem that my RAM assignment is reset after every restart, so I have to reassign it again and again. Is there a solution for this or is it always like that? I play the modpacks over the CurseForge Launcher.

Do you do it in the Minecraft Launcher or directly in the Curse settings?

In the Minecraft Launcher

There's your mistake. The Curse Launcher has settings for this and overwrites your changes in the Minecraft Launcher every time you start it. Change the setting at Curse directly then it fits.
