Me and a few friends are planning to host a slightly larger Minecraft server. We have a Discord server with almost 2500 users and are counting on 100-1000 players for now. We also have people who can make plugins and who are familiar with Java Scripts.
I have already found myself on Youtube and co. Informed but somehow everyone says something different so I'll ask here.
What is the best way to host my Minecraft server?

I would host the server over a rootservee. It's much cheaper and you have unlimited seats. With such a large server you can save several hundred euro per year and you can also run a website or discord bots over it. It's a bit more complicated, however, but everyone should be able to do it. I would recommend the hoster MC-HOST24 to you.
You never have an unlimited number of slots, that's just a promotional gimmick…

You need at least 200 MB RAM per Minecraft slot, i.e. With 100 slots you need at least 20 GB RAM and the operating system also needs at least 4 GB…

I can really recommend a root server at mchost24, I rented one there myself, which with 14 gigabytes of RAM costs just under 40 euro in 3 months - really not much for so much power
