I've been playing Minecraft for quite a while. But I do not play PVP that long… I'm currently playing on the GommeHD server and about 95% of the PVP players are far superior to me… So. Is there a PVP server where not every player is an absolute PVP Pro? A server that is more suitable for PVP beginners, and on which one can also join. (Please name version (s))

The problem is that it's up to the people and not the server. Most younger get Fortnite or switch over there so that only try harder on Gomme etc. Are on the way. You can only hope that Minecraft gets a hype again and thus more players who play fair, normal and not so long, come. If you are looking for a build server with a great community, I recommend Pioneer Empire.
