I already have 100,000 blocks in one direction a mycelial biome. No they won't. Mushroom cows spawn only in the mycelial biome. Biomes are immutable and can't be created artificially. So you have no choice but to transport the cows.
Tip 1: Biome Finder
In the chat you can (if you have the appropriate rights)
/ seed
enter to get the seed of your world. (Just click to copy). You then insert this on the following page and set the filter to Mushroom Fields:

The tool then shows you the coordinates of the next mycelium biome.
It's best to look near your spawn / base, then you don't have to transport the cows that far.
Tip 2: Nether Travel
1 block in the nether corresponds to 8 blocks in the overworld. As a result, walking through the Nether is 8 times faster than walking through the overworld.
Make a portal over the nether roof, lure the mushroom cow into the nether, leash her (or use wheat, but you have to walk slowly) and run on the roof with the cow to a base.
