If you play on a server, the latency comes into play and a certain delay is unfortunately not so easy to remedy.

And how does it look in the world? Are there many red tone circuits or are there many objects? Mobspawner active? Actually, the newer versions are now quite performant. Otherwise I would generally watch that the PC is not overloaded. Quit all background applications and just start the game, create a new world to test. It is difficult to help you there. Then you have a solution. If your screen has 60hz, the 200fps won't help you anyway.
