When I record Minecraft it happens every now and then that at OBS it would overload my encoder.
I have the CPU inside as an encoder, but if the encoder overloads then my CPU is just 30% full. My CPU also had 65-70C °, but that's because I only get a new cooler. Could it be the heat?
Do not understand why my encoder is overloaded, I use CPU because my GPU is not a gaming graphics card and my CPU is stronger. With the graphics card, the encoder overloads even faster.

Playing and recording at the same time is never a good idea. However, this should work with the CPU. You just have to adjust your settings. What have you set for the encoder? (Bit rate, etc.)

Bit rate: 15000
Processor usage preferences: Veryfast
The bit rate of 15000 seems a bit high for gaming by the way. Here are my settings for very good results with a Ryzen 5 1500X
(Settings, output, advanced, recording)
Recording format: mkv
Encoder: H264 / AVC Encoder (AMD Advanced Media Framework)
Presets: indistinguishable quality
Quality presets: quality
The rest left on default.
This gives you a very good quality with low utilization. However, the files get quite huge
