Minecraft for Windows 10?

So I just bought a Minecraft Key for the Microsoft store.

And I have it on the 1.12.0 version. And do not know how I can change the version, can someone help me further?

You can't change the version in Windows 10 Edition, as far as I know.

Maybe confused with the Java version? Happens fast, the name Windows Edition is chosen unfortunate. The Windows Edition is the same as the Pocket Edition on the phone and has nothing to do with the Minecraft as it is otherwise known from the PC.
