b.) Search for a fortress and farm Blaze-Rods. Then combine these with the Ender pearls to make Enderaugen
3.) Search back to the overworld and the Stronghold.
a.) "Destroy" into the portal and all end crystals
b.) Kill the Ender Dragons

No, that's right… Have a look at BastiGHG, he makes speedrun videos or Minecraft playthrough videos… You can practice in a normal world without looking at the time and then try to do everything faster and faster. However, killing iron golem is much more time-consuming than looking for iron in caves, as it can withstand a lot and does not drop… (maybe you will be killed, you don't know)

Don't play in 1.16.5, but in 1.16.1. In 1.16.5 there are Piglin Brutes.
Alternative to your complete point 1: Hypermodern. Just google it. With hypermodern, the ocean is your best friend. You pour the portal at the bottom of an underwater canyon.
1b)
Take beds. 3-8 pieces. A good speed run these days includes a one cycle. Means you kill the ender dragon with beds and just ignore the regeneration towers.
2a) It takes far too long to mine gold ores. What you do is look for a bastion. In this there are many gold blocks, which you can convert into gold bars and use for trading. As a good speedrunner, you know the different types of bastions by heart, and you know where the gold is and where you can trap the Piglins to trade. Plan a route for each type of bastion in advance. Trade until you have 12 or more Ender pearls, that's right. If you haven't got 6 beds in the village, you can convert the string from Piglin trading to wool and use it to craft beds.
3) Build a portal with obsidian that you got from the Piglins and the Bastion boxes, about 150-200 blocks away from 0.0 in x and z directions. Then go through that into the overworld. Call itself "Blind Travel" and save you a lot of money.
3a) Don't destroy the final crystals, just ignore them.
3b) Kill the dragon in one cycle.
