Left click once on a field to take the item, then it sticks to the cursor, and left click again briefly on an empty field, then you drop it there.

To move something to the hotbar (= the bottom bar) you can also use the number buttons. Simply move the mouse over an item and then press a number from 1-9 on the keyboard, then the item goes into the corresponding field in your hotbar.
