With many Youtubers I see in the packs that their own sounds are played and I want to do that on myself, but how does it work? So where in the pack settings are the sounds to exchange?

In short, you simply have to save the sound files in your resource pack under the original name.

I often use https://convertio.co/de/mp4-ogg/ to convert, but I can't try whether MP4 (video) to OGG (audio) works too.
