The new Piglins attack you like that. Is it true that they don't do that as soon as you wear a gold helmet? Or do you have to wear a whole gold armor?

That's true.

A single piece of gold armor (e.g. A gold helmet) is enough.

One part is enough. You can also temporarily distract them with a single gold bar.

Adult Piglins are fundamentally hostile to the player. If the player wears part of a gold armor, they become neutral.
