I have put together a computer. I would like to be able to play Minecraft with ray tracing, edit videos and photos and the whole thing would run on Linux. Is it that good or can I improve something?

The CPU is too weak.
The RT does not work with the card
GTX 1660 is not the right card for ray tracing. This may be supported, but since the card was not built for it, it may be very, very slow.
I would exchange the graphics card for a 1660 Super, the power supply for a modular power supply.
Oh yes, I would exchange the CPU for a Ryzen 5 3600.
An m.2 ssd would also make sense to save space.
Summary:
Edit videos and photos… At least one Ryzen 2600 / 2700x
Raytracing… An RTX from 2070 upwards.
You won't get far with a 240GB SSD.
So I would change a lot
For the 220 euro for the graphics card you get a much better and future-proof namely the RX 580 8GB OC
The CPU is an APU which is unnecessary when you buy a graphics card. You'd rather buy a Ryzen 5 2600, which is a little more expensive but also a lot better and you can then invest the money you save on the graphics card in the CPU. You can also take the Ryzen 5 1600 instead, but for 20 euro less the performance difference is enormous.
I advise you against the chosen housing and recommend the beQuiet! Pure Bass 500
The mainboard is also too expensive for what it offers. I recommend the MSI B450M Mortar MAX
With the money you saved through the other parts, I would buy an HDD because 240GB are far too little. A very good HDD is e.g. The 1TB Toshiba Performance
In any case, check whether there's a tested driver for the GraKa for Linux.
