The question is, what have you already done? I would suggest:
Travel to a Woodland Mansion (the map there sells you a cartographer villager) and conquer it
Conquer an underwater temple
Defeat the Wither and get some beacons
Start a raid and protect the village. Without a bow in case you want a challenge.
Of course, everything on maximum difficulty.
Build something. For example:
A great villa
One (or more) flying island
A giant tree
A cool landscape
A windmill
A pirate ship
A fantasy building from a series or movie that you like. For example the Hobbit House, the Mordor Tower from Lord of the Rings, or the Hokage House from Naruto. I'm sure you will find something.
A cool redstone machine
