I play on the PC on the 1.16 and would like to know whether the ores can be changed as on the 1.8?

No, unfortunately that is no longer possible. However, this is possible with mods or plugins.

In what way? The only thing that has changed according to the wiki is the textures. A resource pack will probably help.
