The graphics card is a good graphics card for FullHD gaming, so you will get more than enough FPS in Minecraft. The processor is already part of the high-end sigment and would ensure that you can upgrade your graphics card in the future without the processor being in the way. So it is quite durable. But I would wait to buy it. NVIDIA's new generation of graphics cards is coming out this year and the new AMD CPUs are coming out at the end of this year. This means that all previous generations, including the two, will become even cheaper. If you now need a PC, you can take the Ryzen 7 2700x, which has about 10% less power than the Ryzen 7 3700x, but is bruchly cheaper. Always place your components first at Skinflint and then see where it is cheapest.
And if gaming is your main application, I would advise against the Ryzen 2700x and the Ryzen 3600. It makes more sense for gaming. However, if you still do video editing and stuff like that, then of course the 2700X is very suitable.
