F3+ N can switch from Creative to Spectator and vice versa
Otherwise you can change the game mode with F3+ F4 from version 1.16.

Hm. I don't know exactly why, but it doesn't work for me. Always only opens the debug screen. Version 1.16.4, but must always use the FN key.
