I'm interested in changing the AI of mobs in Minecraft. I know that you can delete the AI using commands, but there seems to be no way to change the AI using commands. I would like to know a way how I can change them, e.g. Through mods or a code.

So to change mobs and the like in Minecraft you need mods. Either you look to see if there are already any that fit your interests, or you learn how to write mods yourself. There are numerous videos and posts on YouTube and Google, for example.
