Is Minecraft Server in Survival Mode?

Do you know what I do not like about the Minecraft multiplayer? Namely that all servers consist of huge structures or just PVP or something. Do not get me wrong and nothing against PVP, but I have the feeling, all servers are structured… Are not there servers that look like this:

You can play on city build servers like Bausucht or Griefergames. Are there anyway enough Survivalserver

Jenominers.de is in my opinion one of the best servers!

Vanilla, but with a lot of plugins.
