Also, Bukkit or Spigot is suitable for servers that use plugins, useful for example with a mini game server. Vanilla is just the Minecraft version without mods / plugins or other extensions. I hardly know anything about mods but you should actually be able to choose what you have installed or if you have already rented the server. At McHost24 there's a tutorial on YouTube:
I think it won't be much different at Nitrado. But what I don't find so cool about Nitrado is that you have to pay for every slot on the server individually for each slot. With most other hosts you can set yourself how many slots there should be. But you have to look again yourself. Nitrado also has a forum where you can ask questions.

As already written, the basic game is "Vanilla". This means you can't install plugins (these help to modify servers) or mods (modify the game itself, new items, etc; not relevant for normal servers).
I personally always choose Spigot. For example, plugins can be downloaded from SpigotMC: https://www.spigotmc.org/...resources/ and later uploaded to the server.
