Since my wallet is not made for an RTX, I would like to stay with the GTX.
Is a 1080/1080 TI good or would you prefer another one?
I want to play: GTA 5 (just gorgeous without graphics mods), Minecraft with shaders (Chocapic), ARK (doesn't have to be Epic)
The GTX1080ti would be a good choice for you if you can get it at a reasonable price. You can easily have fun with it for a few more years.

Get a gtx 1660 super so you can easily play all games in full hd to the highest quality gtx 1080 is quite old and uses a lot of power and loud
It is not bad. The only question is whether you should rather buy another GPU. If you absolutely want to have a GTX and not an RTX, then the GTX 1080 or GTX 1080 Ti is the right choice for you.
What budget do you have? The GTX 1080 should be somewhere around 370 euro (if you get one at all). An RTX 2070 at 430 euro. I would rather use the RTX 2070.
