I once saw a Minecraft video where someone was playing Minecraft, but so that each mob spawned as a random other. So if you have 5 pigs you have e.g. A shulker, a tan, a chicken, a wither, and a salmon. But just for example. Do you do that in normal vanilla via mod or do you have to install any mod and then use a command?

Since mobs don't usually just change their texture, I think you need to install a mod there. Maybe take a look at https://www.curseforge.com/...ft/mc-mods.
They don't change their texture in the video but are really different mobs.
