You should be able to play normally using a new profile. Or did you mean that you want other mods and don't want to delete your current ones? If so, you can simply move your mods or you can use the Twitch Launcher. And to be able to play with your girlfriend you need a server and if you don't want to spend money on it, you have to take Aternos or something similar.

You can create a second profile in the launcher with the appropriate version. So 1.7.10 if I understand you correctly.
