You write that you bought the bad Windows 10 version. You should have bought the Java version, as far as I know, the Windows 10 version has no way to play on old versions.
In the Java version you can go back to the early days of Minecraft Alpha.

Then you have the Poket Edition (PE).
There are 2 versions of Minecraft, the Java Edition (for all PC players).
And once the PE version (for all players who play on the mobile phone, Xbox, tablet or Windows 10.
The versions differ a lot, as you can't access certain servers via your version and, as I said, you can only play with mobile phone, tablet, Xbox or Windows 10 players.
I also have both versions (since my PC also runs on Windows 10), but only had to buy the whole thing once, because I was able to activate the Java version with the redemption code from the PE version (I don't know how that worked at the time).
Maybe it will work for you to install your Java version as well. (By the way, you have to do this via the browser and not via the Microsoft Store).
If you want to keep the version of Minecraft, I really don't know how to change the version (1.16), I don't think that's possible.
It could also be that the Poker Edition is now called Bedrock Edition, back then it was called differently for me, don't let that confuse you.
There are 2:
1. Java Minecraft, which (almost) all Youtubers and overhaubt all PC players use.
2. Bedrock / Minecraft PE version, which, as I said, is mostly only used on mobile phones, tablets and Xbox. (PC players usually don't play on the version because the players on servers are usually worse there and it is quite easy and almost unfair to win a game as a PC player.)
Play on the version anyway if you want, because you can just as easily play alone in survival or creative mode, there are few differences to the other version.
