It shouldn't be too expensive and should go with Minecraft Streaming and yt videos to create.

RTX 3060.

Costs 500 euro (for release on 02.25.21), the actual release price is 329 euro.

It's currently a bad time to buy hardware (especially graphics cards).

Has to do with Ethereum mining and likely the lockdown, the situation could calm down a bit by the end of March.

At the moment they are all expensive

would get the 3070 but at the moment it just doesn't work

Otherwise there's still the 1660 super but even that is currently overpriced
