I wanted to ask if anyone of you knows why the turtles that I hatch from eggs always disappear in my fenced area… They have water and sand but they always disappear anyway…

Give name tags. Despawn stop.
Wrong, friendly / passive mobs don't despawn.
Only despawn monsters (and can be protected from them with nametags).
In this case it would be a waste. Turtles are friendly mobs.

Did you fence it in?
Then it could be that they get caught somewhere between the fence and the block (they are very small) and then suffocate or bend out of the block when they grow up.
Or you just have a hole in your fence.
Ne are fenced in with walls.
And there's nowhere I looked for them to get out.
