A couple of friends and I are currently setting up a website for a Minecraft server.

Now my question:

We currently do not accept donations, do not sell anything and generally do not make any money from it.

There should be a forum, a wiki and news on the website.
So, I'm a private person myself, I host the server as a private person, and I don't take any money with the server. In theory, I'm still a private individual in terms of legal form, right?

I definitely need an imprint and a data protection declaration, since the website is publicly accessible.

But what else do I have to consider?

If you have data protection and imprint, everything is okay. You don't need more, not even if you are doing business. Only the content of the data protection declaration and imprint is different from that of private individuals.

Recommend to use a free generator for both and possibly supplement the GDPR text if there's something that the generator does not record.
What that could be depends on the offer and what is being saved. Only the operator can judge that.
