I started a survival world in version 1.14.4 and would like to play this world in 1.16.1 / 1.16.2. Do I have to pay attention to something when updating? (e.g. Something is deleted) and 2. Can I "reload" a chunck / area that e.g. The new nether fortresses are or something?

No, you don't have to pay attention to anything, updating a world is easy. If you are still afraid you can make a backup of the world (by copying the folder - you can find it under% appdata% /. Minecraft / saves)
Yes you can. But not individual chunks, only 32x32 chunk regions. Simply delete the respective region in the "regions" folder in the world folder. More about regions https://minecraft.gamepedia.com/...ile_format. But then ugly "chunk borders" are created. Or you can just delete the whole nether.
