Minecraft HUD and options small?

I activated full screen mode on my Minecraft and deactivated it again, but when I activated it, all the displays (ingame, options and the area between the launcher and the worlds, just don't know what it's called) suddenly continued to be at the size of the View from full screen mode, can someone tell me why and how to fix it?

You can set the GUI size in the graphics settings.
