I would like to start with Minecraft pvp and wanted to ask if I should buy Bedrock or Java and what the difference is

Definitely buy Java

If you just want to play PvP on PC then buying the Bedrock Edition would be quite hindered

The best PvP version is 1.8, because from 1.9 on there's a cooldown, shields, etc. That make PvP more boring

But in the 1.16 the mouse sensitivity is better
