Well, it depends. So 1.8 is the classic version for PvP, no question at all, but when it comes to PvP, where you farm your stuff for 3 hours and then fight, then rather 1.16. Because there are simply nicer blocks, I find trading much better, the nether is absolutely amazing and I like the blocks and the version in general. To practice PvP I recommend the game "The Pit" on Hypixel (IP: mc.hypixel.net). You fight against others and level up over time. You can also buy upgrades with money.
Or 1.7. I really can't handle that with the mechanics. 1.8 and 1.7 were and still are the best versions (when it comes to PVP!).
PvP has become much more diverse and interesting - crossbows, shields, axes… I still don't understand where the fun of spamming the mouse button is. In addition, if you are not yet so good, you should definitely not start in a completely outdated version.
