I bought a new PC for Christmas 2018, here are rough dates:
I have noticed that when I just have multiple games open at the same time, I'm running out of memory. Now I want to buy new memory for my birthday, but since there are so many different ones and I have no idea about it, I would like to ask you which one you would buy. I play e.g. Minecraft Modded (requires up to 8 GB) and I sometimes have that open twice. Is 64 GB too much?
32GB RAM is sufficient (would recommend at least one with 3000 MHz). Why exactly do you have Minecraft open twice?

Not many people play multiple games at the same time. Must be boring games.
If you still have slots on the mainboard I would get the same one again (32gb should be enough for Minecraft twice), otherwise replace with better ones.

Wasn't specific enough; I always keep my browser, Discord and Teamspeak open, sometimes on Spotify. My current load with Discord, Teamspeak, Browser and Spotify is 35% (5.5GB)
32GB RAM can now make sense depending on the application or game. Then it would be recommended to use 2x16GB because many motherboards and processors only support high clock speeds in dual channel.
64GB doesn't make sense since you won't get over 32GB in the next few years. The highest RAM usage I have is about 17GB, but then I stream and have many programs open at the same time.
Then another question; I think I'm seeing something right now; Speed: 2133 MHz and 2 of 4 slots occupied.
Do you have 2133 MHz RAM or do you only have your XMP profile not active in the BIOS?

Not exactly, since I bought a pre-made pc (I know, deadly sin)
If you don't know, just get new RAM. 2x16GB (and as I said, preferably at least 3000 MHz, from G.Skill, Corsair, etc. Are all quality brands)

Yeah, I also have 7.2gb load when I'm normal on the destkop with my usual applications.
Go to your bios! You have to clock your ram higher
