I think the jungle is my favorite biome, even if the forest certainly has its advantages. Taiga is not really my thing and the only natural raw materials that are most important to me is sand in a desert, because you can make a lot of glass from it.
For my own shelter, I prefer pouring obsidian foundations and walls at least up to 4 meters above ground level, not necessarily because it looks beautiful, but above all because it can withstand creeper explosions unscathed. But your question was not related to that.
Ultimately, you can make something good out of every area in which you make up your shelter with the closer environment, because, for example, a productive field is not really dependent on rain as long as there's at least one block of water in the vicinity of at least 4 or 5 fields is, so desert would also be suitable as an environment if you bring enough water and above all earth. However, with snow-covered biomes, I would be more concerned, as water quickly turns to ice on the surface.
Since I mostly build my landscapes myself (with World Edit), I'm mostly in a flat world. There's nothing in the way and I can design the landscape the way I want it and how it best suits my building.
