The Gamertag for Minecraft is displayed in my opinion in the Launcher.
You can find your Minecraft name in the launcher in the upper left corner. This looks the same with the Linux version as with the Windows & macOS version.
Your UUID you can find out with this name then hereby: https://mcuuid.net/
Or in .minecraft / launcher_profiles.json, according to the Minecraft Wiki (.minecraft is located either directly in your home directory ~ / or just in ~ / snap / minecraft /)
