Have a ryzen 5 2600x and would like to buy a new graphics card in april. I have 500 euro available and think about whether I want an Rtx 3070 or an rx 5700xt to play fortnite & Minecraft in 1080p 144 fps and stream in 1080 60fps

For gaming on 1080p an RTX 3070 is overkill. In addition, the graphics card is currently not available for 500 euro.
An RX 5700XT is easily sufficient here. Then swap the processor for a Ryzen 5 5600X.
