I would like to convert the map from our server (1.14) to a 1.12 version to do a mod up. Can I do it easily, or do I have to do something else?

No, something like that does not work. The map will either be completely reset or regenerated or your game will crash.
If you are lucky and should load the world will be missing a lot because Forge will remove everything that is not there in the version.
