I put together a PC with quite a few questions and now I have a final pick. But I'm still a little unsure and would ask you if you would change anything.
I want to play with Minecraft, Forza Horizon 4 and other shooters on WQHD 144Hz and also stream. In addition there would be three more screens, including an ultra-wide (34 "). It should also have as much RGB as possible.

If you want to play forza horizon at 144hz in wqhd, you need something better than a rx5700xt. Unless you leave the settings in the lower area. Everything else fits

There's not much to change, of course you could install a 2080 ti but if your budget were sufficient you would probably have done it, the setup is great. Your CPU is one of the best on the market and your GPU is also a monster. Nice!

The funny thing is that B550 motherboards don't even connect all connections via PCIe 4.0. If you're really only interested in this, get an X570.

You must be aware that this mainboard without the latest BIOS that does not support RYZEN 3xxx!

One could hope so, but hope is not known. And that is not a 50 euro mainboard and you should make sure if you don't know how to get the latest BIOS.
