How would you build the spectators in the stands?

I would put villagers in there, but you'd have to limit their range of motion so that they don't walk all over the place.

It would also be possible to represent armor as a person.

Or 2 blocks with a pumpkin for a head.

You can do that with an armor rack. You can also place player heads on this!

Yes, but in the Bedrock edition there's only the standard player head, no heads from other players.
