Minecraft colors aren't that intense anymore?

I have no idea what I did but it's stupid and it should go.
The "admin" was red before but now somehow not anymore

Is that because of your client so is the color red generally no longer displayed or only on the server? If this is only the case on the server then this will be due to the settings of the Tablist Plugin.
