In the launcher you can change the version.
This is possible in the Minecraft Launcher:
Just click on "Installations", then on "New…" and then you can name the installation and choose a Minecraft version. Finally click on "Create" and then on "Play".
If you want to play Pre-Alpha, Alpha or Beta you have to tick the check mark "Historical", so that these versions are also displayed.
